So this May Zini turned 8!! My little girl is growing so fast!! And she was so excited about her birthday!! She made sure that we made preparations for her birthday party days in advance!! And she had my maasi to support her this time!! So Nani and Zini, followed up with us till we finalized and planned everything for the party!!
Once that was done, she shifted her focus to the cake!! She was very clear which flavor she wanted.. It was to be a pineapple cake!! She also designed her cake! It was to be a Frozen themed Castle cake.. Queen Elsa will be standing on the top of her castle, she specified. Her sister Anna has to be at the door of the castle! Because she was the one who went up to her sister’s castle, Zini clarified! And of course there has to be stairs! Olaf will have to wait at the foot of the stairs.. She even drew the design on her white board and made me take a pic of it, just in case someone decides to rub the board clean!! With these traits of careful planning and meticulous follow up, I can see that the girl is clearly taking after her papa!
So here is the cake I made for her 8th birthday!! It is a gravity defying cake, complete with castle, stairs and her favorite princess and cute Olaf the snowman!! Meanwhile I have been trying new recipes! One such recipe that I tried is of baked Falafel!! In our last visit to Ahmedabad, we went to my Fui (Auntie)’s place and my fui’s son who is a big foodie, took us out for dinner to Havmor. He specifically recommended this falafel sandwich! I was a bit skeptical, but he made me try it!! And oh boy!! I was hooked!! I really loved it!!
And I resolved to try it one day!! But what with my surgery and work load at office, it was kept on the back burner!! Also generally whenever I boil some chickpeas / Chana, I end up making my hubby’s and now my daughter’s favorite Punjabi Chole!! Until today!! Today, finally I got a chance to make these deliciousness at my home!! However I decided not to fry them!! I wanted a healthier version, so decided to take the baking route!! I wasn’t very sure how they will turn out, but I must say I was pleasantly surprised!! I used them in my sandwich in place of a patties and I loved it! This healthy, protein packed and vegan falafels are a hit!! Sharing my recipe here!!
Soaked Overnight and boiled Chickpeas – 100 gms (alternatively you can use canned chickpeas too)
Medium sized onion – 1
Garlic – 5 cloves
Cilantro (Dhania patta) – 1/4 cup , you can use parsley in place of cilantro
Garam Masala Powder / Curry Powder – 1/4 teaspoon
half slice of bread
2 tablespoon of water
Juice of 1/2 small lemon
Oil -2 Tablespoon
Salt to taste
- If using soaked and boiled chickpeas, add salt as per taste. If using tinned salted chickpeas, skip salt.
- In a wok (kadai), take oil.
- Add finely cut onions and fry. Add finely cut garlic and fry. Once the onion turn golden brown add garam masala / curry powder and fry.
- Add chopped cilantro / dhania patta and lemon juice and mix well.
- Let it cool down.
- Once cool, mix with the chickpeas, crumbled bread, water and run through the mixer / food processor.
- Once you get the paste consistency, take it out.
- Pre-heat the oven to 180 degree C.
- Take the small lemon sized ball of the prepared chickpea mixture and flatten.
- Bake in the pre-heated oven for 20 minutes. Flip the falafels half way through.
And they are ready! Use in your salads or sandwiches!! You can also shallow fry the falafels in place of baking if you wish!
If you feel that they are dry, you can add 2/3 pinches of soda powder to it or if you are in a mood for indulagance then you can deep fry them too!!
